Lemon pepper chicken has always been a favorite in this family. My kids used to ask for it at least once a week.
I always use freshly squeezed lemon, Himalayan sea salt, and fresh cracked pepper, when I make my lemon pepper chicken. But I never heard of using oregano which this recipe calls for. I also never made it in a slow cooker.
I made this recipe tonight for my daughter and her children. They absolutely loved it.
I originally found this recipe on Pinterest. I made a few tweaks to make it my own. I am sharing my version of that recipe here today.
I had to adjust the amount of each of the ingredients because the original recipe called for more salt than I cared to use.
I also used freshly squeezed lemon because when I made this recipe prior I felt like the lemon was almost overpowering using bottled lemon juice.
I also increased the original amount of oregano because we love it in this family, and I love fresh herbs so I used fresh parsley from my garden too!

Adjustments and Alterations
There are many ways you can change this recipe to your personal taste. You can increase or decrease the amount of the ingredients, add different spices. or even try fresh versus dried spices.
The only warning I will give is that the cooking time is an average. You should pay close attention to the size of the chicken pieces you use as well as what type of chicken you are using.
For example, bone-in breasts will take slightly longer than boneless skinless. If the chicken sits too long it could become dry.
You will have to monitor the chicken as you get closer to the end of the cooking time for best results.
Also, I love to mix things up and made this recipe for shrimp. Instead of using the slow cooker, you can use a skillet. It was wonderful. Anyways, on to the recipe.
